Favorite Summer Hacks + Snacks

A collection of favorites from some of the Christ Fellowship Staff.

3 cups Natalie’s orange juice
1 cup fresh chopped pineapple 
1 packet of acai berry
1 cup of frozen dragonfruit 

*Makes enough for the whole family!

“My kids and I love playing Watermelon Ball in the pool every summer. You fill the ball up with water and pass it underwater. We love getting our goggles on and kicking it back and forth!”

“We were looking for ways to save our yard from the Florida summer heat quickly and without breaking the bank. We found Sunday lawn care online. It was as simple as plugging in our address, and now we can have a lush yard year-round for our baby and fur babies!”

1) Order from Walmart+ so I don't go too crazy when I see snacks in person.
2) When meal prepping, I also make some snacks to grab for when I'm tempted throughout the week.
3) Put some diet-compliant snacks in a sandwich bag so I don't go nuts while eating from the whole bag of chips or whatever.
4) Similarly, wash and cut up strawberries and blueberries and put into a ziplock baggie.

* Toast (gluten-free bread) with butter (plant-based/vegan)
* Mango (my neighbor has a tree and is always eager to get rid of hers)

“The key to being hydrated during summer is finding a good water bottle you are excited about (mine is the Simply Modern one because it’s spillproof and keeps my water cold all day). For some bonus summer flavor, add a True Lime packet.”

Brianne’s Chocolate-Covered Key Lime Pie:

Brianne’s Chocolate-Covered Key Lime Pie:

“This simple ingredient chocolate-covered key lime pie is a must-make every summer!”

Pie
9″ pre-prepared graham cracker pie crust (or make your own!)
14 oz. can of sweetened condensed milk
3 egg yolks (whites not used)
½ cup Nellie & Joe’s Key West Lime Juice (the only key lime juice you’ll ever need!)

Combine milk, egg yolks, and key lime juice. Blend until smooth. Pour filling into pie crust and bake at 350º for 15 minutes. Allow to stand for 10 minutes.

Chocolate Ganache
1 cup semisweet or dark chocolate chips
1 cup heavy whipping cream

Place chocolate in a heat-proof bowl and set aside. Pour heavy cream into a small saucepan and heat over medium/low just until cream comes to a simmer. Once cream is simmering, remove from heat and pour evenly over chocolate—but don’t stir yet! Cover with foil or plastic wrap and let sit for 5 minutes. After 5 minutes, remove the cover and use a whisk to gently whisk the chocolate and cream together until completely melted and smooth. 

Once the pie is cooled and the ganache is ready, pour the ganache over the key lime pie and refrigerate for at least two hours or until ready to serve. Slice, and enjoy this salty & sweet treat!
